We typically recommend about 6 oz of meat per person.  Multiply .375 by the number of people.  100 people would be 38 lbs of meat.

Racks of ribs come 12 to 14 bones per rack and 1 whole chicken normally feeds 4 people.

There is a 5 pound minimum for each catering meat.
